Ingredients

2 cups thinly sliced zucchini
2 cups yellow squash, thinly sliced
1/2 cup freshly grated parmesan cheese
1/4 cup apple cider vinegar
1/4 teaspoon sea salt
1/4 teaspoon pepper
1/2 teaspoon dried basil leaves
2 tablespoon olive oil
1 teaspoon minced garlic
1/2 cup red onion, thinly sliced
2 tomatoes, cut into wedges
Directions
In a large bowl, stir together the cheese, vinegar, salt, pepper, basil, oil and garlic. Add the other vegetables and toss to coat. Serve or let marinade
